Ok, quick post before I start my busy day. I have a lot I want to do today.
First, I am going to clean up the sticky frosting mess that is in my kitchen sink from the Vegan Chocolate Mint Cupcakes I made last night. Then, I am going to head over to Goodwill and return a lopsided lampshade. While I’m out, I am going to try to find some rope lights to put on top of my living room bookshelves. When I get home, I’ll put away the rest of the holiday stuff. After that, I am going to clean my house and put a second coat of Tung Oil on the dresser I am refinishing. Hope I get it all done.
For breakfast this morning, I made an awesome vegan taco. Looks extra delicious on my vintage fiesta plate.
Here’s what I made:
- tortilla (I used flour)
- greens (I used arugula and baby spinach)
- tofu scramble (I had some leftover)
- a few slices of avocado
- a few cilantro sprigs
- In a large frying pan heat the tofu scramble and wilt the greens.
- Layer all ingredients on tortilla.
