The season premier of Parks and Rec is on Thursday, so naturally I am serving (Leslie’s favorite) waffles for dinner. I can’t claim that these waffles are the best (those are in Pawnee) but they are really fluffy and delicious.
Start by mixing together whole wheat flour (I used white whole wheat), sugar, salt, baking powder and cinnamon. Then add a cup of milk (I used almond) and oil.
My first waffle was a disaster and had burnt crumbs all over it. A couple of months ago I saw something on Pinterest and I decided to make cinnamon rolls in my waffle iron. I have no idea what I was thinking. Long story short, it didn’t work. And I was stuck with a gooey mess to clean up. I guess I didn’t get the waffle iron clean enough.
The second waffle turned out better. Somehow I can never quite fill the waffle iron…
I had to make two batches of the recipe to get 6 waffles. I threw out the first one, so these are the remaining five. They are in my freezer now. On Thursday night, I’ll heat them in the toaster and drizzle some maple syrup on them.
